Course Overview

The Superyacht Culinary Academy is an elite training centre and focuses on providing quality training for anyone entering the marine industry. Under STCW-F, all cooks sailing on vessels over 24 meters require certification to operate in a commercial or private galley. This course teaches you how to cook on board a ship, and how to manage a galley kitchen.

 Topics include cooking, provisioning, personal hygiene, food hygiene, safety and how to create nutritional meals under the guidance of a professional chef. This is a must for every person seeking a position on board a merchant or leisure vessel.

The 20-day SAMSA Ship’s Cook certification course is for seafarers designated to take charge of catering onboard a ship and for those requiring certificates of competency. The course is aligned with the ILO(Geneva) and MSN1845(M).

Requirement:

Candidates are required to complete the assessment with a pass rate of over 70% to qualify for the SAMSA Efficient Cook Certificate of Competency. Applicants need to:

·       Be at least 18 years or older

·       Served in the galley on vessels operating beyond 60nm for a period of three months.

·       Served in the galley of a commercially registered vessel >100GT.

·       Provide evidence of previous culinary training 

Sufficient documentary evidence must be supplied with each application.

20-day SAMSA Ship's Cook Certification

Who is it for: Cooks operating on commercial seagoing vessels 

Focus: Ships’ cooks should have the skills, support and resources to serve proper quantities of quality, nutritious food that takes into account seafarers’ various religious and cultural, backgrounds and fulfil hygiene requirements for commercial and leisure vessels at sea.

Knowing how to ensure hygiene in and around the galley is a crucial skill for ships’ cooks and regulation states that food on board must be served under hygienic conditions. Knowing how to store and handle food hygienically plays a crucial role in preventing people from falling ill from the food served on board.

The 20-day Ship’s Cook course offered at the Superyacht Culinary Academy covers all aspects of catering for crew on board a seagoing vessel, empowering candidates with the necessary tools and qualifications to operate a ship’s galley.

3-day Ship's Cook Assessment

Who is it for:  Chefs with relevant qualifications and seagoing experience 

Focus: Chefs who already hold a valid UK Ships’ Cook Certificate under the Merchant Shipping (Certificate of Ships’ Cooks) Regulations 1981 or hold professional chef qualifications may only be required to complete a 3-day practical assessment to qualify for the Ship’s Cook Certificate .
